Our pledge to eat better has caused a shift in how we snack.
Enter: Fuji apple slices and a honey raisin bran muffin, topped with rolled oats. Yum! We've also had the same snack with Pink Lady apples. I loved the Pink Lady apples - so very sweet and crisp. The Fuji apple is great; however, I think that I'm allergic - it left me itchy :-(.

Whadya eat last night?
Baked Salmon w/salad & baked potato. Turned out pretty good. (Truthfully, the salad dressing may have been too sweet for the fish, so we ate the salmon & potato separately from the salad. This made the meal tastes flow better). I baked the salmon in foil & used a lemon pepper seasoning & butter (natural butter - no artificial spreads).
Baked Salmon (in foil) Recipe:
Place one 6 - 8oz salmon fillet in a piece of aluminum foil - I suggest only one fillet per package. Sprinkle your favorite lemon pepper seasoning the over salmon, then top with 1 tsp. real butter. Seal foil and bake at 350 degrees F for 15 - 20 minutes.

- Chopped Romain Lettuce (washed - even though it says pre-washed)
- Sliced cucumber
- Finely Shredded Cheese (pre-packaged combination of Mozzarella, Smoked Provolone, Aged Romano & Parmesan)
- Salt & Pepper to taste
- Honey Mustard Dressing
